traditional cured fish (umai)

Ingredients

  • 1 yellow onion, chopped
  • 1 red onion, chopped
  • 1 tablespoon minced fresh ginger root
  • 1 fresh red chile pepper, finely chopped
  • 1 tablespoon grated lime zest
  • 2 limes, juiced
  • 2 skinned fillets, cut into thin strips
  • salt to taste
