almond and parmesan crusted tilapia

Ingredients

  • 1 teaspoon olive oil, or as needed
  • 3 cloves garlic, minced
  • 1/2 cup grated parmesan cheese
  • 1/4 cup buttery spread (such as smart balance®), softened
  • 1/4 cup slivered almonds, crushed
  • 3 tablespoons reduced-fat olive oil mayonnaise
  • 2 tablespoons bread crumbs
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon seafood seasoning (such as old bay®)
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon onion powder
  • 1/8 teaspoon celery salt
  • 1 pound tilapia fillets

  • set oven rack about 6 inches from the heat source and preheat the oven's broiler. line a broiling pan with aluminum foil or spray with olive oil cooking spray.
  • heat olive oil in a skillet over medium heat; cook and stir garlic until fragrant, 3 to 5 minutes.

  • 12 corn tortillas, warmed

  • 3/4 cup all-purpose flour
  • 1/2 cup low-fat creamy salad dressing (e.g. miracle whip™)
  • 1 1/2 cups crushed saltine crackers
  • garlic salt to taste
  • ground black pepper to taste
  • 1 pinch seasoning salt

  • preheat the oven to 375 degrees f (190 degrees c). rinse fish fillets with water, and pat dry with paper towels.

  • 1 pound wild salmon fillet

  • 1 teaspoon lemon juice
  • 1 teaspoon harissa
  • 1/4 teaspoon smoked paprika
  • 1 tablespoon orange juice
  • 1 tablespoon white

  • preheat oven to 425 degrees f (220 degrees c). coat the inside of a 9x12-inch baking dish with vegetable oil.

  • 1/4 cup vegetable oil

  • season salmon fillets with lemon pepper, garlic powder, and salt.
  • in a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. refrigerate for at least 2 hours.
  • preheat grill for medium heat.
  • lightly oil grill grate. place salmon on the preheated grill, and discard marinade. cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.
