Nif's Seared Scallops

Ingredients
- Servings: 2
- 1 tablespoon olive oil
- 6 fresh basil leaves, chopped
- 1/2 lb scallops (the larger, the better)
- sea salt & freshly ground black pepper
- 2 teaspoons butter, room temperature
- fresh lemon
- chives
Recipe
- 1 in a large nonstick frying pan, add olive oil and turn on low heat; let oil warm. add basil and let oil absorb flavour for 5 minutes. turn heat to medium. sprinkle scallops with salt and pepper and add to hot oil.
- 2 add butter and cook on each side for 2 minutes. remove from heat and add to serving dish. sprinkle with fresh lemon.
- 3 place chives over top and serve.
