Nif's Seared Scallops

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 2
  • 1 tablespoon olive oil
  • 6 fresh basil leaves, chopped
  • 1/2 lb scallops (the larger, the better)
  • sea salt & freshly ground black pepper
  • 2 teaspoons butter, room temperature
  • fresh lemon
  • chives

Recipe

  • 1 in a large nonstick frying pan, add olive oil and turn on low heat; let oil warm. add basil and let oil absorb flavour for 5 minutes. turn heat to medium. sprinkle scallops with salt and pepper and add to hot oil.
  • 2 add butter and cook on each side for 2 minutes. remove from heat and add to serving dish. sprinkle with fresh lemon.
  • 3 place chives over top and serve.
