Steamed Mussels In Saffron Wine Broth

Ingredients

- 1 quart fresh mussels, cleaned 
- 1 cup dry wine 
- 1/4 teaspoon saffron 
- 2 shallots, chopped 
- 1/4 cup fresh parsley, finely chopped 
- 1 lemon, halved 
Recipe
- 1 in a deep saucepan, bring wine, saffron, shallots, and parsley to a boil. 
- 2 add the mussels, cover and simmer for 10-12 minutes or until shells have opened (mussels will be firm but tender).
