Ingredients
- 1 lb salmon fillet
- 1 pinch salt
- 1 pinch pepper
- 10 ounces baby spinach, chopped
- 2 tablespoons pesto sauce
Recipe
- 1 preheat oven to 400.
- 2 make a slit 2/3 of the way through the center of each fillet.
- 3 season with salt and pepper.
- 4 combine the spinach and pesto; spoon the mixture into each slit.
- 5 arrange fillets on broiler pan coated with cooking spray.
- 6 roast for 8-10 minutes.
