Scallop Bake

Total Time: 17 mins Preparation Time: 10 mins Cook Time: 7 mins

Ingredients

  • Servings: 2
  • 1 lb scallops, if large cut in half
  • 1/2 cup 2% low-fat milk
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons butter
  • salt
  • pepper
  • 1/3 cup green onion, chopped
  • 1/4 cup dry breadcrumbs
  • 1/3 cup parmesan cheese, grated
  • 1 teaspoon thyme

Recipe

  • 1 soak the scallops in milk for 10 minutes, drain& dry well.
  • 2 heat oven to 450 degrees f.
  • 3 put scallops in a baking dish just large enough to hold them in a single layer.
  • 4 sprinkle with lemon juice and dot with butter.
  • 5 season with salt& pepper.
  • 6 bake for apprx 5 minutes or until the scallops are opaque.
  • 7 meanwhile mix the crumbs, green onions, thyme and cheese together.
  • 8 sprinkle over the scallops broil for apprx 2 minutes or until the crumbs& cheese are golden.
  • 9 cool before serving.
