Scallop Ceviche

Ingredients

  • Servings: 6
  • 1 lb scallops
  • 1/2 onion, chopped fine
  • 3 jalapenos, seeded and chopped fine
  • 4 limes, juice of
  • 4 1/2 tablespoons lemon juice
  • 2 tablespoons olive oil
  • 1 tablespoon cilantro
  • 2 teaspoons black pepper
  • 1 teaspoon sea salt or 1 teaspoon kosher salt
  • 1 teaspoon coriander
  • 1 teaspoon garlic
  • 1/2 cup diced tomato (about 2 roma tomatoes in size)

Recipe

  • 1 slice scallops down to about bite size.
  • 2 combine scallops and jalapenos with juices, oil, cilantro, coriander and garlic, marinade for 1 hour.
  • 3 add onion, tomatoes, salt and pepper, then marinade for 2 more hours.
