Salmon Potato Patties

Ingredients
- Servings: 4
- 1 (16 ounce) can red salmon (pink salmon may be used)
- 1 1/2 cups leftover mashed potatoes
- 1 medium onion, chopped fine
- 1 egg
- about 1/4 tsp. pepper, to taste
Recipe
- 1 drain the salmon reserving the liquid. break the salmon into a bowl.
- 2 add the chopped onion, mashed potatoes and egg to the salmon. mix thoroughly with your hands. if too stiff, gradually add enough of the salmon liquid until it is easy to work with.
- 3 shape into patties and fry in oil until nicely browned., about 3 or 4 minutes per side.
