Scallops With Zucchini

Total Time: 18 mins Preparation Time: 8 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 medium zucchini, cut into 2 inch strips
  • 3 teaspoons olive oil
  • salt and pepper
  • 1 1/2 lbs scallops
  • 2 teaspoons butter
  • 1 teaspoon minced garlic
  • 2 green onions, sliced
  • 1 large tomato, diced
  • grated fresh parmesan cheese

Recipe

  • 1 in large skillet, heat olive oil, add zucchini, salt and pepper, cook 3 minutes.
  • 2 remove zucchini from pan.
