Salmon Roll Ups

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 (7 ounce) can salmon (cosco brand)
  • 1/2 cup fat-free cottage cheese, small curd
  • 2 tablespoons miracle whip (or mayo)
  • 1 teaspoon dried parsley
  • 1/2 teaspoon pepper
  • 4 flour tortillas
  • 4 romaine lettuce leaves
  • 4 slices tomatoes (optional)

Recipe

  • 1 drain salmon, add cottage cheese, miracle whip (or mayo), pepper and parsley. cover and let sit in fridge for at least 30 minutes or overnight.
  • 2 to assemble, take flour tortillas and warm in in microwave for at least 10 seconds.
  • 3 place one piece of romaine lettuce on tortilla, spread on salmon mixture, top with tomato, roll up and cut in half.
  • 4 serve with carrot sticks and low-fat ranch dressing.
