Kumama's Imperial Crab

Ingredients
- Servings: 4
- 1 lb backfin crabmeat-maryland blue crab meat
- 1/4 cup mayonnaise
- 2 teaspoons chopped pimiento
- 2 teaspoons capers, whole
- 1/2 teaspoon worcestershire sauce
- 1/2 teaspoon salt
- 6 drops liquid hot pepper sauce
- 4 tablespoons mayonnaise
- 1 tablespoon parmesan cheese
- paprika (to garnish)
Recipe
- 1 remove all cartilage from crabmeat. place crabmeat in a large bowl.
- 2 mix mayonnaise, pimento, capers, worcestershire sauce, salt and liquid hot pepper sauce together and blend well. pour over crabmeat and toss lightly.
- 3 divide crabmeat between four 4 aluminum or ceramic scallop shaped baking shells
- 4 mix cheese with mayonnaise and top each shell with one tablespoon of mixture . sprinkle with paprika.
- 5 place shells on cookie sheet or shallow baking pan and bake for 20 minutes at 375 degrees. serve at once.
- 6 makes 4 servings. may be doubled.
