Kumama's Imperial Crab

Ingredients

  • Servings: 4
  • 1 lb backfin crabmeat-maryland blue crab meat
  • 1/4 cup mayonnaise
  • 2 teaspoons chopped pimiento
  • 2 teaspoons capers, whole
  • 1/2 teaspoon worcestershire sauce
  • 1/2 teaspoon salt
  • 6 drops liquid hot pepper sauce
  • 4 tablespoons mayonnaise
  • 1 tablespoon parmesan cheese
  • paprika (to garnish)

Recipe

  • 1 remove all cartilage from crabmeat. place crabmeat in a large bowl.
  • 2 mix mayonnaise, pimento, capers, worcestershire sauce, salt and liquid hot pepper sauce together and blend well. pour over crabmeat and toss lightly.
  • 3 divide crabmeat between four 4 aluminum or ceramic scallop shaped baking shells
  • 4 mix cheese with mayonnaise and top each shell with one tablespoon of mixture . sprinkle with paprika.
  • 5 place shells on cookie sheet or shallow baking pan and bake for 20 minutes at 375 degrees. serve at once.
  • 6 makes 4 servings. may be doubled.
