Low-fat Salmon Bisque

Ingredients
- Servings: 4
- 2 cups cooked salmon (or 2 canned salmon)
- 1 cup tomato juice
- 1/4 cup diced onion
- 1/4 cup diced celery
- 1 teaspoon parsley
- 2 cups water
- 1/8 teaspoon baking soda
- 1/2 tablespoon honey (or sugar)
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 2 tablespoons butter
- 2 tablespoons cornstarch
- 2 cups skim milk
Recipe
- 1 combine first six ingredients (salmon, tomato juice, celery, onion, water and parsley) and simmer fifteen minutes.
- 2 add the next six ingredients (baking soda, honey, salt, pepper, butter and cornstarch).
- 3 mix well until the butter has completely melted and thin with milk. using less or more milk for the consistency you like.
