Oven Baked Mahi Mahi With Orange And Graham Cracker Crust

Total Time: 50 mins Preparation Time: 25 mins Cook Time: 25 mins

Ingredients

  • 2 1/2 lbs mahi mahi
  • 2 tablespoons orange zest
  • 1/4 cup brown sugar
  • 1/2 cup graham cracker crumbs
  • 1/2 tablespoon fresh lemon juice
  • 2 tablespoons fresh orange juice
  • 2 tablespoons cilantro, chopped
  • 2 tablespoons parsley, chopped
  • 2 tablespoons onions, chopped
  • 4 teaspoons extra virgin olive oil
  • 2 tablespoons coriander, chopped
  • 1/2 tablespoon fresh lemon juice

Recipe

  • 1 turn on oven to 375 degrees
  • 2 wash fish with lemon in a glass bowl and drain all liquid. add all ingredients for fish marinade and let sit for 15 minutes.
  • 3 in another bowl, combine orange zest, brown sugar, lemon juice, orange juice and graham cracker crumbs until thoroughly mixed (can also be placed in a food processor).
  • 4 once marinade is set, coat fish with graham cracker mixture and place on non-stick baking tray.
  • 5 drizzle with olive oil.
  • 6 cover with aluminium foil and place in oven and let bake for 20-25 mins until tender and cooked in centre. serve hot.
