Oven Baked Mahi Mahi With Orange And Graham Cracker Crust

Ingredients
- 2 1/2 lbs mahi mahi
- 2 tablespoons orange zest
- 1/4 cup brown sugar
- 1/2 cup graham cracker crumbs
- 1/2 tablespoon fresh lemon juice
- 2 tablespoons fresh orange juice
- 2 tablespoons cilantro, chopped
- 2 tablespoons parsley, chopped
- 2 tablespoons onions, chopped
- 4 teaspoons extra virgin olive oil
- 2 tablespoons coriander, chopped
- 1/2 tablespoon fresh lemon juice
Recipe
- 1 turn on oven to 375 degrees
- 2 wash fish with lemon in a glass bowl and drain all liquid. add all ingredients for fish marinade and let sit for 15 minutes.
- 3 in another bowl, combine orange zest, brown sugar, lemon juice, orange juice and graham cracker crumbs until thoroughly mixed (can also be placed in a food processor).
- 4 once marinade is set, coat fish with graham cracker mixture and place on non-stick baking tray.
- 5 drizzle with olive oil.
- 6 cover with aluminium foil and place in oven and let bake for 20-25 mins until tender and cooked in centre. serve hot.
