Smelts Baked In Wine

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 cup celery, chopped
  • 1/4 cup parsley, minced
  • 2 lbs smelt, dressed, washed and dried
  • 1/2 cup wine
  • 1/2 cup fine breadcrumbs
  • salt
  • pepper
  • cayenne
  • 1 cup mushroom, sliced
  • 6 tablespoons butter

Recipe

  • 1 preheat oven to 500°.
  • 2 place celery and parsley in a greased baking dish.
  • 3 lay the fish on top.
  • 4 pour wine over fish.
  • 5 sprinkle with bread crumbs.
  • 6 add salt, pepper and cayenne.
  • 7 arrange mushrooms on top.
  • 8 dot with butter.
  • 9 bake, uncovered, for about 10 minutes, or until fish is cooked through, basting once with pan juices.
