Smelts Baked In Wine

Ingredients

- 1 cup celery, chopped
- 1/4 cup parsley, minced
- 2 lbs smelt, dressed, washed and dried
- 1/2 cup wine
- 1/2 cup fine breadcrumbs
- salt
- pepper
- cayenne
- 1 cup mushroom, sliced
- 6 tablespoons butter
Recipe
- 1 preheat oven to 500°.
- 2 place celery and parsley in a greased baking dish.
- 3 lay the fish on top.
- 4 pour wine over fish.
- 5 sprinkle with bread crumbs.
- 6 add salt, pepper and cayenne.
- 7 arrange mushrooms on top.
- 8 dot with butter.
- 9 bake, uncovered, for about 10 minutes, or until fish is cooked through, basting once with pan juices.
