Sweet & Sour Stir-fry Shrimp

Ingredients
- Servings: 4
- 2 carrots, thinly sliced
- 1 onion, thinly sliced
- 3 cloves garlic, minced
- 1/2 cup water
- 1/4 cup soy sauce
- 2 tablespoons packed brown sugar
- 2 tablespoons vinegar
- 1 pinch cayenne pepper
- 1 lb large raw shrimp, peeled and deveined
- 1 tablespoon cornstarch
- 2 green onions, sliced (optional)
Recipe
- 1 heat 1 tbs vegetable oil in skillet over med hi heat.
- 2 stir fry carrots, onion and garlic for 4 minutes.
- 3 whisk together water, vinegar soy sauce, brown sugar and cayenne.
- 4 pour into skillet and bring to a boil.
- 5 add shrimps, cook for 3 minutes or until pink.
- 6 whisk cornstarch with 1 tbs water, add to skillet and cook for 1 minute.
- 7 sprinkle with green onions.
