Sardine Fillets With Caper & Vodka Butter

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 3/4 cup fresh breadcrumb
  • 1 1/3 lbs fresh sardine fillets or 1 1/3 lbs trout fillets
  • salt
  • 7 tablespoons butter, softened
  • 1 1/2 tablespoons vodka (finlandia or absolut for the "authentic" taste)
  • 1 1/2 tablespoons capers
  • black pepper, crushed

Recipe

  • 1 preheat oven to 400°f sprinkle 2 tbsp of the breadcrumbs over the base of an ovenproof dish.
  • 2 put the softened butter in a small bowl and beat until light and fluffy. then whisk in the vodka, capers and black pepper. set aside.
  • 3 season the fish lightly with salt and fold each fillet in half so that the skin sides are on the outside. arrange the fillets in the prepared dish.
  • 4 spread the butter over the fish, then sprinkle the remaining breadcrumbs over the fish and butter.
  • 5 bake the fish in the oven for 20 minutes or until the top is crisp and golden.
