Sardine Fillets With Caper & Vodka Butter

Ingredients

- 3/4 cup fresh breadcrumb
- 1 1/3 lbs fresh sardine fillets or 1 1/3 lbs trout fillets
- salt
- 7 tablespoons butter, softened
- 1 1/2 tablespoons vodka (finlandia or absolut for the "authentic" taste)
- 1 1/2 tablespoons capers
- black pepper, crushed
Recipe
- 1 preheat oven to 400°f sprinkle 2 tbsp of the breadcrumbs over the base of an ovenproof dish.
- 2 put the softened butter in a small bowl and beat until light and fluffy. then whisk in the vodka, capers and black pepper. set aside.
- 3 season the fish lightly with salt and fold each fillet in half so that the skin sides are on the outside. arrange the fillets in the prepared dish.
- 4 spread the butter over the fish, then sprinkle the remaining breadcrumbs over the fish and butter.
- 5 bake the fish in the oven for 20 minutes or until the top is crisp and golden.
