Spicy Fish Stew

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 2 large onions, sliced
  • 2 tablespoons oil
  • 1/2 teaspoon curry powder
  • 2 garlic cloves, crushed
  • 1 small bay leaf
  • 3 tablespoons tomato puree
  • 1/2 teaspoon paprika
  • salt, to taste
  • 1/4 teaspoon peri-peri
  • 1 cup boiling water
  • 1 kg fish, cubed
  • 1 tablespoon cornstarch

Recipe

  • 1 lightly brown onion in oil.
  • 2 add curry powder, garlic, bay leaf, tomato puree, paprika, salt and peri-peri.
  • 3 stir through onion and cook for 1-2 minutes.
  • 4 add water, bring to the boil again and add fish.
  • 5 reduce heat and simmer for 10 minutes or until fish is cooked adding more water, if necessary.
  • 6 thicken sauce with cornstarch.
  • 7 serve with boiled new potatoes.
