Spicy Fish Stew

Ingredients
- Servings: 6
- 2 large onions, sliced
- 2 tablespoons oil
- 1/2 teaspoon curry powder
- 2 garlic cloves, crushed
- 1 small bay leaf
- 3 tablespoons tomato puree
- 1/2 teaspoon paprika
- salt, to taste
- 1/4 teaspoon peri-peri
- 1 cup boiling water
- 1 kg fish, cubed
- 1 tablespoon cornstarch
Recipe
- 1 lightly brown onion in oil.
- 2 add curry powder, garlic, bay leaf, tomato puree, paprika, salt and peri-peri.
- 3 stir through onion and cook for 1-2 minutes.
- 4 add water, bring to the boil again and add fish.
- 5 reduce heat and simmer for 10 minutes or until fish is cooked adding more water, if necessary.
- 6 thicken sauce with cornstarch.
- 7 serve with boiled new potatoes.
