Oyster Parmesan

Ingredients
- 1 large onion, minced
- 5 garlic cloves, minced
- 1/2 cup olive oil
- 1/8 teaspoon cayenne pepper
- 4 slices bacon, crisply cooked and crumbled
- 1 pint oyster, with liquid, drained reserving liquid (i cut mine in half)
- 1 1/4 cups seasoned dry bread crumbs
- 1/4 cup grated parmesan cheese
Recipe
- 1 preheat over 350 degrees.
- 2 saute onions and garlic in olive oil until slightly brown.
- 3 add drained oysters and cayenne pepper.
- 4 cook until edges curl.
- 5 remove from heat; stir in breadcrumbs, parmesan cheese, oyster liquid and bacon. mix well. mixture should be very moist (like stuffing). if too dry, add additional water. top with additional breadcrumbs and cheese.
- 6 spoon into individual greased ramekins or custard cups.
- 7 bake for 30 minutes.
