Recipe
- 1 heat large griddle to smoking point.
- 2 grease liberally with olive oil & bacon grease.
- 3 season & sear fish on both sides, turning carefully.
- 4 cook quickly for 3-5 minutes per side.
- 5 heat butter, garlic, & lemon juice to bubbling & serve over fish.
