Salmon Patties

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 5
  • 1 (16 ounce) can salmon
  • 1 tablespoon lemon juice
  • 1/2 medium onion (chopped)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dry mustard
  • 1 tablespoon parsley (chopped)
  • 1 extra large egg
  • 2 cups cracker crumbs (coarse crushed)
  • 1 extra large egg
  • 2 tablespoons milk
  • 1 cup cracker crumb

Recipe

  • 1 flake the salmon into a mixing bowl - remove bones and skin. be sure to use the liquid from the canned salmon.
  • 2 add seasonings, onion, parsley and lemon juice to the salmon. mix well.
  • 3 stir in egg and cracker crumbs to the salmon mixture. mix until thoroughly moistened.
  • 4 shape mixture into patties.
  • 5 dip each patty in a mixture of one beaten egg and 2 tbls of milk. roll or pat the washed patty in a dish of cracker crumbs.
  • 6 fry in a skillet on both sides until just golden brown.
