Salmon Patties

Ingredients

- 1 (16 ounce) can salmon
- 1 tablespoon lemon juice
- 1/2 medium onion (chopped)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon dry mustard
- 1 tablespoon parsley (chopped)
- 1 extra large egg
- 2 cups cracker crumbs (coarse crushed)
- 1 extra large egg
- 2 tablespoons milk
- 1 cup cracker crumb
Recipe
- 1 flake the salmon into a mixing bowl - remove bones and skin. be sure to use the liquid from the canned salmon.
- 2 add seasonings, onion, parsley and lemon juice to the salmon. mix well.
- 3 stir in egg and cracker crumbs to the salmon mixture. mix until thoroughly moistened.
- 4 shape mixture into patties.
- 5 dip each patty in a mixture of one beaten egg and 2 tbls of milk. roll or pat the washed patty in a dish of cracker crumbs.
- 6 fry in a skillet on both sides until just golden brown.
