Scallop Pie (irish)

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 6
  • 8 large scallops
  • 300 milliliter milk
  • 2 salt and pepper
  • 2 tablespoons butter
  • 1 tablespoon flour
  • 1/2 lb mixed mushrooms, sliced
  • 4 tablespoons sweet wine
  • 1 lb fresh mashed potatoes

Recipe

  • 1 clean the scallops and cut in half, then simmer in the milk for 15 minutes.
  • 2 strain, reserving the liquid.
  • 3 heat 1 tablespoon of the butter and stir in the flour, cook for about a minute, stirring, then add the milk gradually, stirring all the time to avoid lumps.
  • 4 season with salt and pepper, add the sliced mushrooms and simmer for about 10 minutes longer; then add the sherry or wine and finally the scallops.
  • 5 when hot, transfer to an ovenproof dish and cover with mashed potatoes, making sure they cover the fish right to the edges.
  • 6 dot with the remaining butter and bake in a moderate oven, 350f, for 20-30 minutes, or until the top is turning brown.
