Sauteed Shrimp With Grapefruit And Avocado

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 medium grapefruits or 2 medium pink grapefruit
  • 1 cup whole wheat couscous, uncooked
  • 2 teaspoons olive oil
  • 2 green onions, diced
  • 1 clove garlic
  • 1 teaspoon ground cumin
  • 1 lb fresh shrimp, peeled and deveined
  • 1/4 cup fresh cilantro
  • 2 teaspoons lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 ripe avocado, pitted peeled and sliced

Recipe

  • 1 peel grapefruit, and cut out sections so that no is on it boil about 1 1/2 cups of water.
  • 2 add couscous and remove from heat.
