Fettuccine With Tomato Clam Sauce

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 8 sun-dried tomatoes
  • 1 tablespoon olive oil
  • 1/2 cup onion
  • 2 cloves garlic
  • 1 can whole clam (including the juice)
  • 1/2 cup chicken broth
  • 1/2 cup tomato paste
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon red pepper flakes
  • 3 ounces cooked fettuccine pasta

Recipe

  • 1 soak tomatoes in boiling water for 5 minutes.
  • 2 drain and puree.
  • 3 heat oil, add onion and garlic – cook 5 minutes.
  • 4 add remaining clam juice, broth, tomato paste and spices.
  • 5 bring to boil and simmer 15 minutes.
  • 6 add clams.
