Fettuccine With Tomato Clam Sauce

Ingredients

- 8 sun-dried tomatoes
- 1 tablespoon olive oil
- 1/2 cup onion
- 2 cloves garlic
- 1 can whole clam (including the juice)
- 1/2 cup chicken broth
- 1/2 cup tomato paste
- 1/2 teaspoon dried oregano
- 1/8 teaspoon red pepper flakes
- 3 ounces cooked fettuccine pasta
Recipe
- 1 soak tomatoes in boiling water for 5 minutes.
- 2 drain and puree.
- 3 heat oil, add onion and garlic cook 5 minutes.
- 4 add remaining clam juice, broth, tomato paste and spices.
- 5 bring to boil and simmer 15 minutes.
- 6 add clams.
