Salmon Croquettes

Total Time: 43 mins Preparation Time: 40 mins Cook Time: 3 mins

Ingredients

  • 1 (16 ounce) can salmon (or 2 cups fresh cooked salmon)
  • 1/2 teaspoon salt
  • cayenne pepper
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon grated onion
  • 1/4 cup cracker crumb
  • 1 egg, well beaten

Recipe

  • 1 flake fish, removing skin and bones. add other ingredients and mix well. shape into croquettes. roll in bread or cracker crumbs. beat one egg lightly with 1 tblsp. water. dip croquettes in egg mixture, then again in crumbs. let stand 30 minutes. fry at 375* until golden brown. drain on paper towels and serve hot with tartar sauce and french fries.
