Salmon Croquettes

Ingredients
- 1 (16 ounce) can salmon (or 2 cups fresh cooked salmon)
- 1/2 teaspoon salt
- cayenne pepper
- 1 tablespoon chopped parsley
- 1/2 teaspoon grated onion
- 1/4 cup cracker crumb
- 1 egg, well beaten
Recipe
- 1 flake fish, removing skin and bones. add other ingredients and mix well. shape into croquettes. roll in bread or cracker crumbs. beat one egg lightly with 1 tblsp. water. dip croquettes in egg mixture, then again in crumbs. let stand 30 minutes. fry at 375* until golden brown. drain on paper towels and serve hot with tartar sauce and french fries.
