Lemon Baked Salmon

Total Time: 45 mins Preparation Time: 10 mins Cook Time: 35 mins

Ingredients

  • Servings: 6
  • 1 1/2 lbs salmon
  • 2 tablespoons mayonnaise
  • 1 teaspoon fish rub seasoning (pride of szeged)
  • 1/2 lemon, juiced
  • 1 cup panko breadcrumbs
  • 1/4 cup parmesan cheese (optional)
  • 1 tablespoon lemon zest
  • 1/2 salt
  • 3/4 teaspoon pepper

Recipe

  • 1 place salmon skin side down in a glass baking dish.
  • 2 brush mayonnaise on the salmon.
  • 3 squeeze 1/2 lemon over top.
  • 4 mix panko with zest of one lemon (about 1 t) and salt and pepper;and parmesan cheese if desired.
  • 5 sprinkle panko mixture over top of the salmon.
  • 6 bake in 350 degree oven for 35 minutes (using convection oven) or 45 minutes (conventional oven); or until fish flakes.
  • 7 brown top under broiler for 2-3 minutes if desired; especially if cheese was added.
