Oyster And Potato Surprise Cakes
Ingredients
- 3 slices bacon
- 12 oysters
- 6 medium potatoes
- 1 tablespoon horseradish cream
- 1/4 cup sour cream
- 1/4 cup dry breadcrumbs
- 50 g butter
Recipe
- 1 remove rind from bacon and chop flesh roughly.
- 2 cook in a fry pan until crisp, turning often.
- 3 cool.
- 4 drain oysters.
- 5 combine oysters and bacon.
- 6 peel potatoes and cut into quarters.
- 7 cook in boiling salted water for 10 minutes or until tender.
- 8 drain.
- 9 mash potatoes with horseradish cream and sour cream.
- 10 form half-cupfuls of mixture into patties.
- 11 make a hollow in centre of each pattie and fill with oyster mixture. mould potato over cavity.
- 12 roll patties in breadcrumbs.
- 13 heat butter in a fry pan and cook patties on each side until golden.
