Oyster And Potato Surprise Cakes

Ingredients

  • 3 slices bacon
  • 12 oysters
  • 6 medium potatoes
  • 1 tablespoon horseradish cream
  • 1/4 cup sour cream
  • 1/4 cup dry breadcrumbs
  • 50 g butter

Recipe

  • 1 remove rind from bacon and chop flesh roughly.
  • 2 cook in a fry pan until crisp, turning often.
  • 3 cool.
  • 4 drain oysters.
  • 5 combine oysters and bacon.
  • 6 peel potatoes and cut into quarters.
  • 7 cook in boiling salted water for 10 minutes or until tender.
  • 8 drain.
  • 9 mash potatoes with horseradish cream and sour cream.
  • 10 form half-cupfuls of mixture into patties.
  • 11 make a hollow in centre of each pattie and fill with oyster mixture. mould potato over cavity.
  • 12 roll patties in breadcrumbs.
  • 13 heat butter in a fry pan and cook patties on each side until golden.
