Ingredients
- 2 tablespoons margarine
- 1 1/2 cups onions, chopped
- 1 cup green bell pepper, chopped
- 1/2 cup celery, chopped
- 2 garlic cloves, minced
- 12 cups french bread (1-inch cubes)
- 2 cups seasoned stuffing mix or 2 cups croutons, plain
- 3/4 cup chicken stock
- 2 tablespoons fresh parsley, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 40 ounces oysters, undrained, and rough chopped
- 1 cup green onion, chopped
- 1/2 cup parmesan cheese, finely shredded
- cooking spray
Recipe
- 1 preheat oven to 300 (convection oven with fan).
- 2 melt margarine in a dutch oven over med-high heat.
- 3 add 1 1/2 cups onion, bell pepper, celery, and garlic. saute 5 minutes, or until tender.
- 4 add bread and next 6 ingredients (bread through oysters).
- 5 cook 7 minutes or until done, stirring constantly. remove form heat, and stir in green onions and cheese.
- 6 spoon into a shallow pan coated with cooking spray.
- 7 place in steamer for 10 minutes.
- 8 bake at 300, for 10 minutes.
