Ingredients

- 12 oysters, shucked
- 1 tablespoon butter
- 3 fresh garlic cloves, minced
- 9 ounces baby spinach, chopped
- 1 teaspoon anisette
- 4 spring onions, diced
- 1 egg
- 3/4 cup mayonnaise (lite or regular)
- 1 dash tabasco sauce
- 1/2 teaspoon worcestershire sauce
- 1 cup romano cheese, grated
- 1/2 teaspoon dry mustard
Recipe
- 1 broil oysters in 9 x 9 inch pan to remove excess liquid (only about a minute); drain.
- 2 meanwhile saute butter with garlic.
- 3 add chopped spinach and saute until wilted.
- 4 add anisette and set aside.
- 5 spoon spinach mixture over oysters (either in the 9x9 inch pan or on individual oyster shells).
- 6 mix the spring onions, egg, mayonnaise, tabasco sauce, worcestershire sauce, romano cheese, and dry mustard; spoon over spinach mixture.
- 7 return to broiler and cook until browned on top .
