Salmon Dijonnaise

Ingredients

- 1 lb salmon fillet
- flour
- 3 tablespoons butter
- 1/3 cup dry vermouth or 1/3 cup wine
- 1 tablespoon dijon mustard
- 2 teaspoons capers
- 1/2 teaspoon garlic salt
- 1/4 cup heavy cream
Recipe
- 1 dust salmon lightly with flour.
- 2 in large skillet, melt butter over medium high heat.
- 3 add salmon (skin side up for fillets).
- 4 cook 3 minutes.
- 5 mix together wine, mustard, capers and garlic salt.
- 6 turn salmon; cook 2 minutes.
- 7 add wine mixture.
- 8 cook 2 minutes until fish flakes easily with a fork.
- 9 remove salmon, add heavy cream into skillet.
- 10 boil briefly to thicken.
- 11 serve over salmon.
