Salmon Dijonnaise

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 lb salmon fillet
  • flour
  • 3 tablespoons butter
  • 1/3 cup dry vermouth or 1/3 cup wine
  • 1 tablespoon dijon mustard
  • 2 teaspoons capers
  • 1/2 teaspoon garlic salt
  • 1/4 cup heavy cream

Recipe

  • 1 dust salmon lightly with flour.
  • 2 in large skillet, melt butter over medium high heat.
  • 3 add salmon (skin side up for fillets).
  • 4 cook 3 minutes.
  • 5 mix together wine, mustard, capers and garlic salt.
  • 6 turn salmon; cook 2 minutes.
  • 7 add wine mixture.
  • 8 cook 2 minutes until fish flakes easily with a fork.
  • 9 remove salmon, add heavy cream into skillet.
  • 10 boil briefly to thicken.
  • 11 serve over salmon.
