Salmon Loaf With Dill Sauce

Ingredients

  • Servings: 2
  • 3/4 cup chopped celery
  • 1/2 cup chopped onion
  • 2 tablespoons vegetable oil
  • 1 (7 1/2 ounce) can salmon, drained
  • 1 egg, lightly beaten
  • 2 tablespoons milk
  • 1 cup soft breadcrumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup mayonnaise or 1/2 cup miracle whip
  • 1/4 cup sour cream
  • 1 tablespoon lemon juice
  • 1 tablespoon milk
  • 2 teaspoons snipped fresh dill (or 3/4 tsp. dry)
  • 1/2 teaspoon sugar
  • 1/8 teaspoon pepper

Recipe

  • 1 in a skillet, saute celery and onion in oil until tender.
  • 2 in a bowl, combine the salmon, egg, milk, bread crumbs, salt, pepper and sauted veggies.
  • 3 transfer to a greased 6x3x2-inch loaf pan and bake at 350f for 40-45 minutes or until an inserted knife comes out clean.
  • 4 in a small bowl, combine sauce ingredients. serve with salmon loaf.
