Salmon Loaf

Ingredients
- 1 (16 ounce) can salmon (red or pink..your choice)
- 1/2 cup dry breadcrumbs
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1 teaspoon parsley, fresh chopped (optional)
- 1/2 cup hot milk
- 2 tablespoons butter
- 2 egg yolks
- 2 egg whites
Recipe
- 1 preheat oven to 350°.
- 2 add the butter to the milk & heat, but do not boil.
- 3 mix all ingredients together except the egg whites.
- 4 beat the egg whites until stiff & gently fold into salmon mixture.
- 5 put into a buttered loaf pan or casserole dish.
- 6 bake, uncovered for 1 hour.
