Salmon Loaf

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 1 (16 ounce) can salmon (red or pink..your choice)
  • 1/2 cup dry breadcrumbs
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1 teaspoon parsley, fresh chopped (optional)
  • 1/2 cup hot milk
  • 2 tablespoons butter
  • 2 egg yolks
  • 2 egg whites

Recipe

  • 1 preheat oven to 350°.
  • 2 add the butter to the milk & heat, but do not boil.
  • 3 mix all ingredients together except the egg whites.
  • 4 beat the egg whites until stiff & gently fold into salmon mixture.
  • 5 put into a buttered loaf pan or casserole dish.
  • 6 bake, uncovered for 1 hour.
