Spicy Salsa-cilantro Shrimp

Ingredients

- 20 medium shrimp, tails removed and cleaned
- 1/4 cup olive oil
- 1 tablespoon minced garlic
- 1/2 cup fresh cilantro, chopped
- 1/2 cup salsa (i recommend a fresh made salsa, or a pico de galo, you don't want a soupy tomato based salsa for thi)
- 2 tablespoons fajita seasoning mix
Recipe
- 1 mix all ingredients together, in a bowl and marinate for 30 minutes.
- 2 heat medium pan on stovetop.
- 3 cook for approximately.
- 4 4 minutes, or until shrimp are no longer pink.
- 5 do not over cook, as shrimp will be"rubbery".
- 6 remove from stovetop and serve over pasta, rice, or a good crusty bread.
