Spicy Salsa-cilantro Shrimp

Total Time: 34 mins Preparation Time: 30 mins Cook Time: 4 mins

Ingredients

  • Servings: 2
  • 20 medium shrimp, tails removed and cleaned
  • 1/4 cup olive oil
  • 1 tablespoon minced garlic
  • 1/2 cup fresh cilantro, chopped
  • 1/2 cup salsa (i recommend a fresh made salsa, or a pico de galo, you don't want a soupy tomato based salsa for thi)
  • 2 tablespoons fajita seasoning mix

Recipe

  • 1 mix all ingredients together, in a bowl and marinate for 30 minutes.
  • 2 heat medium pan on stovetop.
  • 3 cook for approximately.
  • 4 4 minutes, or until shrimp are no longer pink.
  • 5 do not over cook, as shrimp will be"rubbery".
  • 6 remove from stovetop and serve over pasta, rice, or a good crusty bread.
