French Toast With Smoked Salmon On Greens

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1/2 loaf french bread, baguette
  • 3 eggs
  • 1/3 cup light cream
  • 1 tablespoon fresh italian parsley, minced
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1 pinch pepper
  • 1 tablespoon butter
  • 12 cups mixed greens
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 (4 ounce) package thinly sliced smoked salmon
  • 1/4 cup diced red onion
  • 2 tablespoons capers

Recipe

  • 1 slice baguette on the diagonal into 1/2 inch thick slices to get 12 slices, set aside.
  • 2 in a shallow dish, whisk together eggs, cream, parsley, paprika, half of the salt and pepper. dip each slice into egg mixture, turning to coat will.
  • 3 melt half of the butter into a non stick skillet over medium high heat and pan fry the baguette slices for about 3 minutes turning once or twice or until golden. repeat with remaining baguette slices.
  • 4 in bowl, toss mixed greens with oil, lemon juice and remaining salt and divide onto 6 plates. divide baguette slices and top with smoked salmon. sprinkle with red onion and capers.
