French Toast With Smoked Salmon On Greens

Ingredients

- 1/2 loaf french bread, baguette
- 3 eggs
- 1/3 cup light cream
- 1 tablespoon fresh italian parsley, minced
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1 pinch pepper
- 1 tablespoon butter
- 12 cups mixed greens
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 1 (4 ounce) package thinly sliced smoked salmon
- 1/4 cup diced red onion
- 2 tablespoons capers
Recipe
- 1 slice baguette on the diagonal into 1/2 inch thick slices to get 12 slices, set aside.
- 2 in a shallow dish, whisk together eggs, cream, parsley, paprika, half of the salt and pepper. dip each slice into egg mixture, turning to coat will.
- 3 melt half of the butter into a non stick skillet over medium high heat and pan fry the baguette slices for about 3 minutes turning once or twice or until golden. repeat with remaining baguette slices.
- 4 in bowl, toss mixed greens with oil, lemon juice and remaining salt and divide onto 6 plates. divide baguette slices and top with smoked salmon. sprinkle with red onion and capers.
