Ginger Fish Sauce (tirk Khngay )

Ingredients

  • 1/4 cup boiling water
  • 1/4 cup sugar
  • 1/4 cup fresh lime juice (about 2 limes)
  • 1/4 cup fish sauce
  • 1/3 cup fresh gingerroot, peeled and grated
  • 2 garlic cloves, minced
  • 3 hot chili peppers, seeded and chopped

Recipe

  • 1 in a small bowl, mix water with sugar until sugar is dissolved.
  • 2 stir in remaining ingresdients and let sit until cooled.
  • 3 use as a dipping sauce.
