Lamb Sate With Peanut-mirin Sauce

Ingredients

  • Servings: 4
  • 2 teaspoons lime rind, grated
  • 2 tablespoons lime juice
  • 1 tablespoon peanut butter
  • 2 teaspoons sugar
  • 2 teaspoons fish sauce
  • 1/2 teaspoon curry powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground coriander
  • 2 garlic cloves, minced
  • 1 lb lamb tenderloin, trimmed and cut into 16 4-inch long strips
  • 1 1/2 tablespoons sugar
  • 1 tablespoon fresh cilantro, chopped
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons lime juice
  • 2 tablespoons mirin
  • 1 teaspoon fish sauce
  • 1 serrano chili, seeded and finely chopped
  • 1 tablespoon dry roasted peanuts, chopped

Recipe

  • 1 prepare grill to med-high.
  • 2 to prepare lamb, combine first 9 ingredients in a medium bowl, stirring til smooth. add lamb to bowl; toss well to coat. let stand at room temp 15 minute.
  • 3 to prepare sauce, combine 1 1/2 t sugar and next 6 ingredients (through chile) stirring with a whisk. stir in peanuts.
  • 4 thread 2 lamb pieces lengthwise onto each of 8 12" skewers. place skewers on grill; grill 3 min on each side or til done. serve with sauce.
