Smoked Salmon And Capers Over Linguini

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 ounces salmon fillets, smoked and flaked (i use echo falls cajun flavor found near the fish counter at my local grocery store)
  • 1 green pepper, sliced in thin strips
  • 1 yellow pepper, sliced in thin strips
  • 3 tablespoons olive oil
  • 3 tablespoons capers, drained
  • 1 cup cherry tomatoes, cut in half
  • 1 lb linguine, cooked to taste
  • parmesan cheese, for topping
  • salt, for pasta water and to taste

Recipe

  • 1 boil salted water and cook noodles to taste. drain and cover, set aside.
  • 2 heat large saute pan. add olive oil, capers, peppers, cherry tomatoes, and cook until tender, not soft and should still be bright in color.
  • 3 add salmon and heat through.
  • 4 add pasta to pan and warm through.
  • 5 serve in large bowl and top with parmesan cheese if desired.
