Smoked Salmon And Capers Over Linguini

Ingredients
- Servings: 4
- 4 ounces salmon fillets, smoked and flaked (i use echo falls cajun flavor found near the fish counter at my local grocery store)
- 1 green pepper, sliced in thin strips
- 1 yellow pepper, sliced in thin strips
- 3 tablespoons olive oil
- 3 tablespoons capers, drained
- 1 cup cherry tomatoes, cut in half
- 1 lb linguine, cooked to taste
- parmesan cheese, for topping
- salt, for pasta water and to taste
Recipe
- 1 boil salted water and cook noodles to taste. drain and cover, set aside.
- 2 heat large saute pan. add olive oil, capers, peppers, cherry tomatoes, and cook until tender, not soft and should still be bright in color.
- 3 add salmon and heat through.
- 4 add pasta to pan and warm through.
- 5 serve in large bowl and top with parmesan cheese if desired.
