- 1 ounce smoked salmon, cut into slivers
- pepper, to taste

- 1 lightly beat the eggs with the water. put the bowl over a saucepan with boiling water, lower the heat and stir the eggs while they cook. stir in the smoked salmon and add freshly ground pepper to taste. wonderful served with toast!
