Smoked Salmon Chowder

Ingredients

- 1 onion, finely diced
- 1 tablespoon butter
- 1 1/2 lbs potatoes, diced
- 2 cups chicken broth
- 2 cups milk
- 12 ounces smoked salmon, sliced in ribbons
- 1 lemon, juice of
- chopped fresh parsley, to garnish
Recipe
- 1 fry the onion slowly in butter until soft and translucent.
- 2 add potatoes, broth and milk. bring to a boil, reduce to a simmer, and cook until potatoes are tender, 15-20 minutes.
- 3 add salmon, lemon juice and parsley. cook just a minute or two until the salmon is warm.
