Smoked Salmon Chowder

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 onion, finely diced
  • 1 tablespoon butter
  • 1 1/2 lbs potatoes, diced
  • 2 cups chicken broth
  • 2 cups milk
  • 12 ounces smoked salmon, sliced in ribbons
  • 1 lemon, juice of
  • chopped fresh parsley, to garnish

Recipe

  • 1 fry the onion slowly in butter until soft and translucent.
  • 2 add potatoes, broth and milk. bring to a boil, reduce to a simmer, and cook until potatoes are tender, 15-20 minutes.
  • 3 add salmon, lemon juice and parsley. cook just a minute or two until the salmon is warm.
