Surimi (artificial Crab Meat) Salad

Ingredients

- 12 ounces surimi, well flaked
- 1 small avocado, peeled & diced
- 1/2 cup celery, thinly sliced
- 1 cup alfalfa sprout
- 1 tablespoon low-fat mayonnaise
- 2 tablespoons low-fat plain yogurt
- 2 tablespoons horseradish cream
- 1 teaspoon lemon juice
- lettuce leaf
Recipe
- 1 combine surimi, avo, sprouts and celery in bowl.
- 2 stir mayo, yogurt, horseradish& lemon juice together.
- 3 add to surimi and toss gently.
- 4 put lettuce leaves on 4 plates and divide salad on top.
