Surimi (artificial Crab Meat) Salad

Ingredients

  • Servings: 4
  • 12 ounces surimi, well flaked
  • 1 small avocado, peeled & diced
  • 1/2 cup celery, thinly sliced
  • 1 cup alfalfa sprout
  • 1 tablespoon low-fat mayonnaise
  • 2 tablespoons low-fat plain yogurt
  • 2 tablespoons horseradish cream
  • 1 teaspoon lemon juice
  • lettuce leaf

Recipe

  • 1 combine surimi, avo, sprouts and celery in bowl.
  • 2 stir mayo, yogurt, horseradish& lemon juice together.
  • 3 add to surimi and toss gently.
  • 4 put lettuce leaves on 4 plates and divide salad on top.
