Sardine And Vegetable Saute

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon roasted garlic granules
  • 1 teaspoon salt (optional)
  • 1 bunch collard greens, chopped
  • 2 yellow squash, sliced
  • 1 medium onion, chopped
  • 2 (4 1/4 ounce) cans sardines in water, undrained
  • 2 tablespoons tomato paste
  • 1 tablespoon water

Recipe

  • 1 place seasonings and vegetables into 1 gallon zip lock bag and tumble until all the vegetables are coated thoroughly.
  • 2 empty coated vegetables into large skillet and saute 5 - 7 minutes over medium heat.
  • 3 add sardines, tomato paste and water
  • 4 stir thoroughly breaking sardines into small pieces.
  • 5 saute 5 - 7 more minutes or until vegetables are tender.
  • 6 serve and enjoy.
