Salmon Pasta Salad (21 Day Wonder Diet: Day 17)

Ingredients

- 1 cup spiral pasta
- 170 g asparagus, trimmed and chopped coarsely
- 2 tablespoons low-fat ricotta cheese
- 1 teaspoon lemon rind, finely grated
- 1/4 cup lemon juice
- 1 garlic clove, crushed
- 1 small red capsicum, sliced thinly
- 1/3 cup flat leaf parsley, chopped coarsely
- 2 green onions, sliced thinly
- 210 g salmon, in springwater drained and flaked
Recipe
- 1 cook pasta in medium saucepan of boiling water, uncovered, until just tender. add asparagus, cook 1 minute. drain.
- 2 meanwhile, combine cheese, rind, juice and garlic in large bowl; add pasta, asparagus and remaining ingredients to bowl. toss to combine.
