Smothered Tilapia

Ingredients
- Servings: 4
- 1 lb tilapia fillet, thawed if necessary
- 1 tablespoon butter
- salt and pepper
- 4 -5 roma tomatoes, chopped
- 2 -3 green onions, chopped
- 1 tablespoon chopped fresh basil leaf
- 1 teaspoon olive oil
- 2/3 cup shredded monterey jack cheese
Recipe
- 1 preheat oven to 450°.
- 2 place fish fillets on a lightly greased shallow pan.
- 3 sprinkle fish with salt and pepper.
- 4 dot with butter.
- 5 in a bowl, combine tomato, onion, basil, olive oil, salt and pepper to taste. (this should resemble bruschetta topping in consistency and taste.)
- 6 spoon over fish.
- 7 bake fish for about 8-10 minutes, or until it flakes easily when tested with a fork.
- 8 turn off oven.
- 9 sprinkle fish with cheese and return to oven just to melt the cheese.
