Smothered Tilapia

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 lb tilapia fillet, thawed if necessary
  • 1 tablespoon butter
  • salt and pepper
  • 4 -5 roma tomatoes, chopped
  • 2 -3 green onions, chopped
  • 1 tablespoon chopped fresh basil leaf
  • 1 teaspoon olive oil
  • 2/3 cup shredded monterey jack cheese

Recipe

  • 1 preheat oven to 450°.
  • 2 place fish fillets on a lightly greased shallow pan.
  • 3 sprinkle fish with salt and pepper.
  • 4 dot with butter.
  • 5 in a bowl, combine tomato, onion, basil, olive oil, salt and pepper to taste. (this should resemble bruschetta topping in consistency and taste.)
  • 6 spoon over fish.
  • 7 bake fish for about 8-10 minutes, or until it flakes easily when tested with a fork.
  • 8 turn off oven.
  • 9 sprinkle fish with cheese and return to oven just to melt the cheese.
