Sunshine Fish

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 2 filets of sea trout or 2 grouper
  • 1 tomato, sliced thin
  • 1 onion, sliced thin
  • 6 medium fresh mushrooms, sliced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon mayonnaise
  • salt and pepper

Recipe

  • 1 cut a piece of foil large enough to enclose the fillets.
  • 2 spray the foil with non-stick cooking spray.
  • 3 place the filets on the foil.
  • 4 coat the filets with one teaspoon of mayonnaise.
  • 5 add lemon juice, salt and pepper.
  • 6 layer onions, tomatoes and mushrooms on the fish and bring corners of the foil together to make a packet.
  • 7 place on cookie sheet.
  • 8 bake 20 minutes at 400°f.
  • 9 open packet and place under broiler until slightly brown.
  • 10 fish is done when you can flake it with a fork.
