Swedish Pickled Beets

Ingredients
- 1/2 cup cider vinegar (or vinegar)
- 1/2 cup water
- 1/4 cup sugar
- 1 teaspoon salt
- 1/8 teaspoon fresh ground pepper
- 2 cups beets, thinly sliced, cooked and peeled
Recipe
- 1 combine vinegar, water, sugar, salt and pepper.
- 2 bring to a boil; cool. place beets in a deep bowl and pour dressing over them.
- 3 let stand at least 12 hours before serving.
- 4 serve with fried fish, hot and cold meats or on a smörgasbord. enjoy!
