Swedish Pickled Beets

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • 1/2 cup cider vinegar (or vinegar)
  • 1/2 cup water
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1/8 teaspoon fresh ground pepper
  • 2 cups beets, thinly sliced, cooked and peeled

Recipe

  • 1 combine vinegar, water, sugar, salt and pepper.
  • 2 bring to a boil; cool. place beets in a deep bowl and pour dressing over them.
  • 3 let stand at least 12 hours before serving.
  • 4 serve with fried fish, hot and cold meats or on a smörgasbord. enjoy!
