Mexican Crab And Cheese Croustades

Ingredients

- 1 cup crab (canned, frozen, fresh or imitation)
- 4 scallions, sliced
- 1/4 cup cilantro, minced
- 1/2 cup sour cream, to taste (or more)
- 1 cup monterey jack cheese, grated
- salt and pepper
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder
- 1 lime, juice of
- at least 32 thin slices baguette
Recipe
- 1 combine all filling ingredients in a mixing bowl. set aside. if using a baguette instead of pre toasted croustades, bake the bread slices in
- 2 oven at 250 degrees in single layer for 10 to 15 minutes. cool.
- 3 mound about 1 tablespoon of the filling on toasted baguettes slices. if serving right away, bake at 425 degrees f. for 8 to 10 minutes.
- 4 to freeze: place prepared croustades on a baking sheet and slip into the freezer for at least an hour.
- 5 once appetizers are frozen, place gently in an airtight container with parchment or wax paper between layers.
- 6 they will keep about three months in the freezer. bake frozen for 10 to 12 minutes at 425 degrees f. can be frozen up to 6 months.
