Salmon-stuffed Mushrooms

Total Time: 46 mins Preparation Time: 30 mins Cook Time: 16 mins

Ingredients

  • Servings: 18
  • 1/3 cup butter
  • 4 garlic cloves, minced
  • 1/2 lb salmon fillet
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 18 large mushrooms
  • 1 cup shredded havarti cheese
  • 1/2 cup chopped parsley

Recipe

  • 1 preheat oven to 325 degrees. in a large saucepan, melt butter; add garlic and cook and stir for 2-3 minutes until fragrant.
  • 2 sprinkle salmon with salt and pepper and add to skillet.
  • 3 cook, turning once, just until salmon flakes.
  • 4 remove pan from heat and remove fish from pan.
  • 5 remove stems from mushrooms and save for another use.
  • 6 drizzle mushrooms with the garlic butter in the pan.
  • 7 break salmon into small pieces and stuff into the mushroom caps.
  • 8 sprinkle each mushroom with some of che cheese.
  • 9 bake for 11-16 minutes or until caps are tender and cheese melts.
  • 10 sprinkle with parsley and serve immediately.
