Salmon-stuffed Mushrooms

Ingredients

- 1/3 cup butter
- 4 garlic cloves, minced
- 1/2 lb salmon fillet
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 18 large mushrooms
- 1 cup shredded havarti cheese
- 1/2 cup chopped parsley
Recipe
- 1 preheat oven to 325 degrees. in a large saucepan, melt butter; add garlic and cook and stir for 2-3 minutes until fragrant.
- 2 sprinkle salmon with salt and pepper and add to skillet.
- 3 cook, turning once, just until salmon flakes.
- 4 remove pan from heat and remove fish from pan.
- 5 remove stems from mushrooms and save for another use.
- 6 drizzle mushrooms with the garlic butter in the pan.
- 7 break salmon into small pieces and stuff into the mushroom caps.
- 8 sprinkle each mushroom with some of che cheese.
- 9 bake for 11-16 minutes or until caps are tender and cheese melts.
- 10 sprinkle with parsley and serve immediately.
