Spaghetti & Shrimp Cilantro Cream

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 bunch fresh cilantro, without stems
  • 1 teaspoon garlic, minced
  • 1/4 cup toasted pumpkin seeds
  • 1/2 teaspoon cajun seasoning
  • 1/4 cup parmesan cheese
  • 1/4 cup olive oil
  • 1 lb medium shrimp
  • 1 cup heavy cream
  • 1/2 cup wine
  • cajun seasoning, to taste

Recipe

  • 1 prepare pesto.
  • 2 wash cilantro and remove stems.
  • 3 in blender chop pumpkin seeds.
  • 4 add cilantro, garlic, cheese and seasoning.
  • 5 slowly add olive oil until blended. (more olive oil may be needed depending on amount of cilantro; pesto should not be runny).
  • 6 peel, devein and wash shrimp.
  • 7 heat 2 tbsps of olive oil in pan.
  • 8 place shrimp in pan and cook for about 3 mins or until pink and slightly curled.
  • 9 remove shrimp to plate and keep warm.
  • 10 deglaze pan with wine.
  • 11 add 3 t of pesto and stir to blend.
  • 12 add cream and mix well.
  • 13 return shrimp to pan and heat.
  • 14 serve over spaghetti and enjoy the praise.
