Spaghetti & Shrimp Cilantro Cream

Ingredients
- Servings: 4
- 1 bunch fresh cilantro, without stems
- 1 teaspoon garlic, minced
- 1/4 cup toasted pumpkin seeds
- 1/2 teaspoon cajun seasoning
- 1/4 cup parmesan cheese
- 1/4 cup olive oil
- 1 lb medium shrimp
- 1 cup heavy cream
- 1/2 cup wine
- cajun seasoning, to taste
Recipe
- 1 prepare pesto.
- 2 wash cilantro and remove stems.
- 3 in blender chop pumpkin seeds.
- 4 add cilantro, garlic, cheese and seasoning.
- 5 slowly add olive oil until blended. (more olive oil may be needed depending on amount of cilantro; pesto should not be runny).
- 6 peel, devein and wash shrimp.
- 7 heat 2 tbsps of olive oil in pan.
- 8 place shrimp in pan and cook for about 3 mins or until pink and slightly curled.
- 9 remove shrimp to plate and keep warm.
- 10 deglaze pan with wine.
- 11 add 3 t of pesto and stir to blend.
- 12 add cream and mix well.
- 13 return shrimp to pan and heat.
- 14 serve over spaghetti and enjoy the praise.
