Mamma's Friday Night Hearty Fish Soup

Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 celery ribs, chopped
- 2 carrots, sliced
- 1 green pepper, chopped
- 2 (28 ounce) cans tomatoes, crushed
- 1 (16 ounce) can tomato sauce
- 1 (6 ounce) bottle clam juice
- 3 medium potatoes, peeled and diced
- 1/2 teaspoon pepper
- 1 teaspoon dried oregano
- 4 fresh basil leaves, torn up
- 1/2 lb halibut, cut into bite-sized pieces
- 1/2 lb sole, cut into bite-sized pieces
- 1/2 lb red snapper, cut into bite-sized pieces
- 1 cup dry wine
- 3 -4 tablespoons fresh parsley, chopped
- 5 -6 fresh basil leaves, chopped, for garnish
Recipe
- 1 place oil in a large pot.
- 2 add onion, garlic, celery, carrots and green pepper, and saute over medium heat just until al dente.
- 3 add tomatoes, tomato sauce, clam juice and potatoes.
- 4 cook over medium heat for 5 minutes.
- 5 add pepper, oregano and basil.
- 6 cover and simmer for 20 minutes, or until potatoes are done.
- 7 add fish and wine.
- 8 cover and continue simmering for 10 minutes.
- 9 sprinkle with chopped parsley and basil.
