Mamma's Friday Night Hearty Fish Soup

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 celery ribs, chopped
  • 2 carrots, sliced
  • 1 green pepper, chopped
  • 2 (28 ounce) cans tomatoes, crushed
  • 1 (16 ounce) can tomato sauce
  • 1 (6 ounce) bottle clam juice
  • 3 medium potatoes, peeled and diced
  • 1/2 teaspoon pepper
  • 1 teaspoon dried oregano
  • 4 fresh basil leaves, torn up
  • 1/2 lb halibut, cut into bite-sized pieces
  • 1/2 lb sole, cut into bite-sized pieces
  • 1/2 lb red snapper, cut into bite-sized pieces
  • 1 cup dry wine
  • 3 -4 tablespoons fresh parsley, chopped
  • 5 -6 fresh basil leaves, chopped, for garnish

Recipe

  • 1 place oil in a large pot.
  • 2 add onion, garlic, celery, carrots and green pepper, and saute over medium heat just until al dente.
  • 3 add tomatoes, tomato sauce, clam juice and potatoes.
  • 4 cook over medium heat for 5 minutes.
  • 5 add pepper, oregano and basil.
  • 6 cover and simmer for 20 minutes, or until potatoes are done.
  • 7 add fish and wine.
  • 8 cover and continue simmering for 10 minutes.
  • 9 sprinkle with chopped parsley and basil.
