Mom T's Salmon Patties

Ingredients
- olive oil
- 2 (6 ounce) cans boneless skinless pink salmon
- 2 eggs, lightly beaten
- 1 tablespoon onion, minced
- 1 teaspoon parsley, chopped
Recipe
- 1 heat olive oil in a skillet.
- 2 drain salmon and flake it into a bowl. add eggs, onion and parsely. mix well.
- 3 shape into 4 patties and fry in pan until lightly browned on both sides and cooked through, about 8-10 minutes.
- 4 note- sometimes i don't feel like making the patties and just throw it all in the skillet and make scrambled salmon.
