Prawn And Mango Salad

Ingredients

  • Servings: 4
  • 1 red chili (deseeded and chopped)
  • 2 tablespoons lime juice
  • 1 tablespoon clear honey
  • 450 g king prawns (pre cooked)
  • 300 g mangoes (2 medium peeled and diced)
  • 150 g mixed salad greens
  • 1 pointed sweet red pepper (deseeded and sliced)
  • 200 g cucumbers (sliced)
  • 4 spring onions (trimmed and sliced)

Recipe

  • 1 whizz chilli, lime juice, honey on blender to make dressing. season and mix with half of the prawns cover and chill for 20minutes.
  • 2 make salad by tossing all other ingredients in a bowl adding the prawns and dressing on the top.
